Head of Broccoli, chopped
Two carrots, sliced elongated
1/2 cup blackberries
1 – 1 1/2 tbsp balsamic vinegar
1 tbsp olive oil
feta cheese, crumbled
Preheat the oven to 200C. Place the broccoli and carrots onto a baking tray that has been covered with parchment paper. In a separate bowl, combine the blackberries, vinegar and olive oil. Using a fork, smash the ingredients together, until lightly combined. Do not form a paste. Pour the dressing over the vegetables and then roast for about 20 minutes.
To serve, place in a bowl and top with leaves of baby rocket and feta cheese. Drizzle with extra olive oil, if desired.
